Malabar Spinach Dip

Malabar spinach is a well known vegetable in Ayurveda. The botanical name of these beautiful greens is Besella Rubra. It is high in nutrition and acts as a natural coolant, a great vegetable to use in the summers. Malabar spinach nourishes the body , purifies the blood and acts as a aphrodisiac. Including this vegetable in your regular diet helps to prevent weakness of bones, anaemia and cardiovascular diseases. 

Ingredients

Malabar spinach (Basale soppu) – 150gms

Garlic cloves – 2 peeled

Basil leaves – Handful

Coconut oil – 3-4 tbsp 

Blanched peeled almonds – 50-75gms (soaked)

Lemon juice – Optional

Preparation

  1. Heat the coconut oil, add chopped malabar spinach and let it cook for 10 mins along with one clove of garlic (until soft)

  2. Add the cooled spinach to a blender jar with basil, garlic and almonds. 

  3. Blend the mixture without using water, can use more oil or lemon juice if necessary. 

The dip is ready to be served with rotis, bread, tacos or can even be used in pastas and fried rice. 

Note* Malabar spinach can be substituted with baby spinach and kale. The properties of the meal may change once substituted
