Almond Moringa Soup 

Serves – 4

Moringa is one of the most nourishing and detoxifying plants on the planet. Moringa's medicinal benefits is highly detoxifying, it pulls toxins from the blood, muscle, fat, bone, bone marrow, liver and strengthens the immune system.

Fresh Moringa – 2 medium sized bunches (100gms)

Yellow moong dal – 100gms

Cashew nuts – 50 gms (soaked)

Rosemary (dry or fresh) – 1tsp

Oregano (dry) – 1tsp

Thyme – (dry) – 1tsp

Coconut oil – 2 tbsp

Jaggery – ½ tsp

Mint for garnish

Salt to taste

 

Preparation 

Cook moringa leaves + moong dal with 1:3 water and let it cool down. Once it’s cool enough, blend it into a soup consistency (feel free to add more water to bring it to a soupy consistency). Also, Blend the soaked cashew nuts into a smoothie consistency separately.

Add 2tbsp coconut oil to the pan, once it is warmed up, add oregano, thyme and rosemary into the pan.

As the herbs leaves out the aroma, add moringa moong dal mixture to the pan and mix it well for 5 mins. 

Final step is to add the cashew cream/paste into the soup, salt, jaggery and garnish with mint. 

 Moringa is heating/warming in nature, that’s why it is important to balance the heating property of moringa by adding yellow moong dal as moong dal is cooling.  Herbs are added to aid digestion. 

Note* Fresh Moringa can be substituted to 2tbsp of Moringa powder.
