Khichidi recipe
Ingredients
Black peppercorns (crushed) - 1tsp
Cumin seeds (crushed) - 1tsp
Ginger - 1-2 inches (grated)
Ghee/coconut oil - 2tbsp
Turmeric - 1tbsp
Cilantro to garnish
Yellow/green moong beans - 1 cup
Basmati rice/quinoa/millets - 1cup
Salt to taste (Pink/Black salt)
Step 1
Rinse and wash moong beans and rice. Soaking moong beans, rice 2 hours before cooking makes the it easily digestible.
Step 2 - Heat up the oil/ghee in a pot, add crushed spices along with grated ginger, stir fry until fragrance in low heat
Step 3 - Add mung beans, rice along with 6 cups of water
Step 4 – Add Turmeric - 1tbsp and salt to taste.
*Can add coconut cream/milk to make it more creamy.
Let it slowly cook for about 35-40mins, can add more water to make it more soupy. Garnish with some cilantro before serving.
Couple of variations for this
Can add the following to make it taste a bit different -
Any vegetable, preferably mono vegetable, example zucchini, carrots, pumpkin, banana peppers, sweet potato, bell peppers.. pretty much anything, to keep it Sattvic, only Sattvic vegetables are recommended.
Also, can add different spice mixes, stir fry mix, paprika, all spice, garlic pretty much anything, again to keep it Sattvic, can stick to the classic recipe.
Can also increase the amount of black peppers and cumin to increase the spice levels.
Kashaya (Herbal concoction)
Kashaya Recipe
Ingredients
Black peppercorns (crushed) - 1tbsp
Cumin seeds crushed - 1tbsp
Cloves – 2 crushed
Cardamom - 2 with the pods crushed
Grated ginger - 2 inches
Cinnamon - 1 inch crushed
** It’s important to use whole spices instead of spiced powders as the whole spices has higher vital force and medicinal value.
Boil 3 cups of water with the above spices until it reduces to 1.1/2 cup.
Once there is a significant reduction in the quantity, can be strained into cups (half cups) with a pinch of turmeric (1/4 tea spoon) with half a cup of milk, if vegan almond milk or coconut is recommended as cashew milk, oat milk has warming properties. Since the tea itself is heating/warming in nature, it's not a great idea to add more warming ingredients in it.
Can add any sweetener, preferably red rock sugar, unfortunately it's not available in many countries, so maple syrup, coconut sugar can be a great substitute.
This herbal tea is heating/warming in nature, used as a medicine during cough, fever, sore throat. Used to reduce kapha (mucus), this can increase pitta if not balanced with something cooling, it's good for kapha followed by vata.
Turmeric is well absorbed when combined with some kind of fat and black peppercorns. Also, turmeric and honey should never be heated due to its properties. It's better when used raw or can be mixed in something warm.
