Ambode (Lentil fritters)

Ingredients

Channa dal/Bengal gram - 3/4 cup

Red chillies - 2-3 non spicy ones, can also add 1 teaspoon of paprika if not chillies.

Cilantro - 1/4 cup.

Fresh/ dry coconut - half cup.

Asafoetida - just a pinch.

Salt - 1/2 tea spoon.

Mint leaves - 1/4 cup (optional)

Turmeric - 1/2 teaspoon

Ginger grated - 2 tablespoon.

Method

Channa dal has to be soaked 2-3 hours before cooking. The following ingredients are blended in a food processor without any water to make the mix.

Channa dal (soaked and drained)

Ginger

Salt

Red chillies/paprika

Mint leaves

Turmeric

Asafoetida

The above ingredients should be mixed well in a food processor (the lentil mixture should not be super smooth, should have rough texture to it)

Once the mix is ready, finely chopped cilantro, coconut shredding are added and mixed well.

The last step is to have a pan of oil to fry these lentil mix in a patty form until golden brown in a low - medium flame. Patties can be made by taking a small handful of the mixture, making them into a ball, press them against your hand to make small patties.

Notes : Garlic and onions can be used instead of asafoetida, however that's not Sattvic, if you're looking for an exclusive Sattvic recipe, sticking to this recipe helps.

Also, if not coconut shredding, cashew shredding can be used. Roasted shredded cashews tastes really good.

Instead of mint leaves, basil, dill or spinach can be used.
